Now it’s time to start adding some abstract flavors and higher end spirits that can be enjoyed straight or on a large ice cube. This list builds on the spirits already listed in the beginner and intermediate bar.

Adding More Flavors To Your Bar

MESCAL: Del Maguay Vida This artisanal, organic, price friendly mezcal is a favorite in the bar world. Aromas of fresh fruit, honey and vanilla are followed by smokey, silky palate with ginger, cinnamon and sandalwood.

PISCO: Macchu Pisco An all natural, female produced 100% quebranta grape distilled spirit hailing from the Ica Valley of Peru. Notes of grapefruit, berries, grass and pepper. Try it in a Pisco Sour!

BOURBON: Elijah Craig Barrel Proof Bourbon pioneer Rev. Elijah Craig is credited as the first distiller to use charred oak barrels. This highly-sought after bourbon can vary from batch to batch however it’ll always be aged 12 years and have sublte tobacco, chocolate and leather flavors.

AGED RUM: Ron Zacapa 23 Year Made from rums 6 to 23 years old this Guatamalan blend is aged in old american wine, port and whiskey barrels giving it a smooth, complex and unique flavor. Try it on its own or in a Maple Rum Old Fashioned.

COFFEE LIQUEUR: St. George Nola As a tribute to New Orleans style coffee, St. George’s head distiller Dave Smith teamed up with professional roaster Brad Joyce (who has roasted every batch of beans for Nola since the 1950’s) to create this robust coffee liqueur. The use of the fruity, chocolaty Yirgacheffe coffee bean balances out the chicory root’s bitter undertones. Drink this for breakfast! (or anytime!)

HERBAL LIQUEUR: Green Chartreause Comprised of 130 herbs, plants and botanicals, and named after the Grand Chartreause Monistry this French liquor has been produced since 1737 by the Carthusian Monks. It is sharp, herbal, pungent, and complex but the strong flavors are rounded out with a soft sweetness.

FLORAL LIQUEUR: Rothman & Winter Créme de Violette Simple and elegant, this liquor is naturally flavored and colored by infusing Queen Charlotte and March violettes of the Alps in a brandy base. It is widly used in the Aviation cocktail but goes great with bubbles too!

CHERRY LIQUEUR: Luxardo Marachino Crystal clear in color, approachable and sophisticated this classic is considered the standard for Marachino Liqueur. Originally it was produced in 1821 in the city of Zara off the Dalmatian Coast (now Croatia). The distillary was destroyed during WWII and most of the family killed. Giorgio Luxardo, survived and fled to Italy with a cherry sapling. He reconnected with a collegue who had the Luxardo recipe book in Venito. Today, the sixth generation is active in the company and they produce a full line of Italian liqueurs.

AMARO: Amaro Nonino Made from grappa and infused with herbs, barks and roots, Nonino displays the quintassential biter qualities of an amaro. It can be enjoyed as an aperitif or digestif or sipmly on the rocks.

APERTIF: Aperol Named for the French slang word for aperitif which is apero and produced by the Campari Group, this an Italian aperitif is flavored with gentain, rhubarb and cinchona. It’s bright orange color really stands out in cocktails.

BUBBLES: Sparkling Wine such as Cava or Prosecco

FRESH FRUIT & JUICE: Grapefruit, Pineapple

OTHER INGREDIENTS & GARNISHES: Ginger, Fresh Herbs, Eggs, Cream and Coconut Cream

SYRUPS: Maple, Oregeat

BITTERS: Chocolate Bitters, Orange Bitters, Tiki Bitters

Cocktail Ideas

We hope you are as excited as we are at this point! Many have been credited for the creation, but popular rumor states a mysterious woman named Cheryl Cook invented it in South Beach, Miami.

A Vodka Gimlet?

Famed bartender John Caine claims that the Cosmo was originally called a Vodka Gimlet and dates back to pre WWII. Gimlets were drinks with added sugar and lime to mask the flavor of well liquor. After WWII Cointreau (a French orange liqueur) was discovered and the Kamikaze was born. The Kamikaze is essentially the Cosmo minus the Cranberry but we’ll talk more about that later.

According to Dale DeGroff, Ocean Spray Cranberry Juice promoted spirits heavily and between 1956 and 1970 they aggressively marketed a collection of cocktails. One of the drinks called the Harpoon was the Cosmo minus the orange liqueur. DeGroff, also heavily credited for its creation, put it on his menu at the Rainbow Room in 1996. In his book The Craft of the Cocktail, he states, “Shortly after that, Madonna was spotted drinking one, and overnight I was getting calls from as far away as Germany and Australia for the recipe.”

Toby Cecchini (owner of Long Island Bar in New York) claimed that he took the disgusting west coast version which consisted of Rose’s lime juice and Rose’s grenadine and reconstructed it using fresh ingredients, Cointreau and Absolute Citron, which had just come out. Regardless of the origins, this tasty martini deserves a spot in your cocktail database.

Calories in a Cosmopolitan

Calories (kcal)

172

Fat (g)

0

Protein (g)

0

Fiber (g)

0

Joining him would be John G. Martin, president of G.F. Heublein Brothers Inc. Some even claim this adds to the fizziness of the ginger beer.

However, the ingredients of a mule are considered acidic and over time, that acid can erode a traditional copper mug. Not to worry, if this concerns you, simply look for copper mugs that are lined on the interior with stainless steel.

Regardless, we can't see ourselves drinking a Mule out of any other vessel!
GLASS: COUPE

History

While largely referred to as a prohibition era cocktail, this drink was actually discovered in 1916 on the Detroit Athletic Club menu. It was the most expensive drink on the menu selling for 35 cents. The popular vaudevillian monologist (similar to todays stand up comedian) Frank Fogarty is responsible for spreading the cocktail to New York. Though not a bartender, he is generally credited for inventing the cocktail.

After WWII, the cocktail basically disappeared and until 2004 when Murray Stenson of Zig Zag Cafe in Seattle found it in Ted Saucier’s 1951 cocktail book Bottoms Up!. The drink became a cult hit in Seattle and Oregon and quickly gained popularity all over the country.

Variations

This drink’s origins trace back to the Detroit Athletic Club during prohibition using bathtub gin. Bathtub gin was a popular way of mixing cheap grain alcohol with other ingredients such as juniper berries, glycerin and other flavors to mask the taste. The bathtub was a perfectly sized vessel to mix the alcohol being large enough to supply the demand of customers but small enough to be undetectable by the police. Since flavoring agents varied greatly in bathtub gin, the Last Word varied from one establishment to another. Play around with different gins to find your perfect cocktail! Gin’s range of flavor today is so diverse you can find anything from the traditional London dry style with piney, juniper notes, to super floral or fresh and crisp.

Probably the most popular variation on this cocktail is the Final Word created by Phil Ward at Death & Co. in New York City in 2007. The cocktail replaces gin with rye and substitutes lemon for lime.

Final Word

Ingredients

3/4 oz rye

3/4 oz Green Chartreuse

3/4 oz Maraschino liqueur

3/4 oz lemon juice

garnish: brandied cherry

Method

Combine all ingredients in cocktail shaker with ice. Shake and double strain into coupe.

GLASS: COUPE

Recommendation: If you ever find yourself in Seattle, I strongly recommend checking out Zig Zag Cafe for an incredible cocktail experience. Death & Co.’s flagship store in Manhattan won Best American Cocktail Bar and World’s Best Cocktail Menu at Tales of the Cocktail Spirited Awards in 2010. They now have a location in Denver and Los Angelos and still receives world wide recognition as an industry leader.

The first printed recipe appears in Ensslin’s 1916 Recipes for Mixed Drinks. The original recipe was 1.5 oz. El Bart gin, .75 oz. lemon juice, 2 dashes maraschino liqueur, and 2 dashes crème de violette. The light floral flavor combined with soft citrus and sweet Maraschino coats the mouth with elegance and sophistication.

As with most cocktails, there are many tales of origin. Another popular one is that is was invented at Waldorf-Astoria hotel in Manhattan, NYC by Oscar Tschirky, better known as "Oscar of the Waldorf". Funny enough he's also credited for the creation of the Waldorf salad and Eggs Benedict even though he was never a chef. He simply used his reputation as maître d'hotel for credibility and also authored a cocktail book!

Creme de Violette

There are a ton of different recipes for this cocktail and many of them omit the violette liqueur because it was so scarce. In the 1960s it disappears from the U.S. market altogether. It takes nearly 50 years before Rothman & Winter teames with Haus Alpine in 2007 to revive, bottle and import the delicious violette liqueur. Now there are a few brands who produce the pretty purple cordial like The Bitter Truth and Gifford.

* A sour is a category of cocktails containing a spirit(s) with citrus and sweetener.
Chances are, if you hang around a bar long enough, you’ll eventually hear a plethora of expressions that might sound like a whole new language. This list of common terms will help you decipher bartender slang and have you sounding like a pro when ordering.

To get you started, here’s a list of frequently used words that will help you not only when you order a cocktail but also when reading recipes and refining your techniques at home.

ABV

Alcohol by volume. This refers to the amount of alcohol in a certain volume of a drink or spirit. All alcohol is required to have it listed on its label. Beer tends to be 3-13%, wine is generally 8-15%, liqueur is about 15-20% and liquor 40-55%.

Bitters

A potent alcoholic blend of herbs, barks, botanicals or other natural flavors used in drops or dashes to add complexity to cocktails.

Corner / Behind

Called out to make one’s location known when not in sight as to avoid collisions.

Dirty

Adding olive juicy to a martini. Filthy is extra extra dirty, or extra extra olive juice.

Free Pour

Not using a jigger or any form of measurement.

Julep Cup

A silver or tin cup that a Mint Julep is traditionally served in.

Lowball

A drink served in a short glass like a rocks or old fashioned glass.

Neat

A spirit served in a lowball glass without dilution from ice or water.

Pour Spout

A metal and rubber utensil that fits in the neck of a bottle and streamlines the flow of liquor regulating the amount that is poured from the bottle.

Proof

A standard way of measuring the amount of alcohol in America. The proof is double the ABV.

Shaker

An instrument used for shaking.

Straight Up

A shaken or stirred drink that is served in a stemmed glass. (not to be confused with neat)

Top Shelf

Premium liquor placed on higher shelves more visible to the customer.

Virgin

A drink with no alcohol. Also referred to as a mocktail.

Back

A small glass of non alcoholic liquid that accompanies an alcoholic beverage. “I’ll have a shot of whiskey with a coke back.”

Build

To make or “build” a cocktail usually by adding ingredients in a particular order.

Chaser

A small amount of delicious liquid taken after a shot to help ease the taste of the shot.

Dash

A few drops of something. (often bitters)

Finger

An outdated term of measurement. It is no longer used as bartender’s fingers vary in size.

Highball

A cocktail consisting of spirit and soda served in a tall, slender highball glass. (similiar to a collins glass except the collins glass is usually a bit taller)

Julep Strainer

A round spoon like strainer with holes originally designed to strain Juleps. It is used to strain drinks from a mixing glass.

Mixer

A non-alcoholic ingredient in a cocktail. I.e. soda or juice.

Nightcap

A drink before bed.

Prohibition

A time in U.S. history from 1920-1933 where the government banned the production, distribution and sales of all alcohol.

Rim a Glass

A term for coating the rim of a glass with sugar or salt.

Shot Glass

Usually a 1-2 ounce glass that holds a shot or shooter.

Strain

Pouring a drink through a strainer after shaking or stirring.

Tonic

A carbonated beverage flavored with quinine.

Wet

Usually referring to a martini, a ratio of more vermouth to gin.

Bar Spoon

A long-handled spoon used to mix and layer cocktails. It’s length ensures it reaches the bottom of a tumbler and the spoon holds 5 milliliters.

Bruise

Since the flavors are literally illimitable, here’s a few of my favorites to get started.

Spicy: Infuse your tequila with jalapeños for 3-7 days. (be sure to taste daily to get the desired amount of spice.) If you didn't get a chance to prepare the tequila in advance, you can just muddle the jalapeño. If you don’t keep jalapeños on hand for that random moment you want some spice, try adding some spicy tinctures to your collection. I always have a bottle of Bitterman’s Hellfire Habanero Shrub handy. You’ll only need a few drops so a bottle is well worth the investment. I also really like the way ginger plays in a margarita so again, you can muddle fresh ginger or for less kick, sub the triple sec for a ginger liqueur. My favorite brand is Stirrings but Domaine de Canton, slightly more expensive, is nice too.

Floral: Use elderflower liqueur like St. Germaine or St. Elder in place of the triple sec.

Herbal: Muddle fresh herbs or try replacing Green or Yellow Chartreuse for triple sec.

Fruity: Here we go! Muddle any fresh fruit (especially berries) for great summer sippers. Only have frozen? Fantastic! Throw it in a blender to make your favorite flavored frozen beverage.

Note: Margaritas fall under the category of sours so some people add a splash of egg white to achieve a foamy texture.

The earliest starts in 1938 somewhere between Tijuana and Baja California at a restaurant named Rancho La Gloria. Owner Carlos Herrera supposedly created it for the Broadway actress Marjorie King who was allergic to most alcohol but allegedly not to tequila.

The Daisy

Also worth noting, the Margarita falls into a category of drinks known as Daisys which combine spirit, liqueur, and lime. The word daisy translated in Spanish is margarita. Since many Americans traveled to Mexico during prohibition to imbibe, it is possible they brought the “margarita” back with them.

Mexico’s news agency at the time along with many others like to to credit “Pancho” Morales who is said to have first made the drink at Tommy’s Place Bar in 1942 in Juárez.

Still another popular legend claims Margarita Sames, a wealthy socialite from Dallas, created the drink in her Acapulco vacation home in 1948 when she was entertaining her guests. Among her prominent guests was Tommy Hilton who apparently brought the cocktail back to his hotel chain. This is unlikely though because Jose Cuervo began a campaign for the Margarita in 1945 with the tagline, “Margarita: It’s more than a girl’s name.” Cuervo claimed the drink was named in honor of a Mexican showgirl named Rita de la Rosa and invented in 1938.
